Easy grain free almond flour pancakes recipe

- 200 grams almond flour
- 4 eggs
- 10 grams baking powder
- 5 mL almond extract
- 3 grams ground cinnamon
- 1 gram ground nutmeg
- pinch of mace
- 160 mL nut milk [cashew milk recipe]
- oil for frying
In a small mixing bowl, whisk the eggs until fluffy.
In a medium mixing bowl, sift together dry ingredients. Add almond extract and eggs, mixing thoroughly, then add the nut milk. Stir until just combined.
Heat a generous amount of oil in a large skillet. Scoop enough batter into the hot skillet to make a silver dollar size pancake (larger is not recommended). Leave space around the first pancake, then pour out enough additional pancakes to cover the skillet. Cook 2 minutes per side on medium heat, flipping in between.
Add additional oil and repeat until all batter is used. Makes about 12 pancakes.
