Easy grain free coconut flour pancakes recipe

- 70 grams coconut flour
- 5 eggs
- 10 grams baking powder
- 5 mL vanilla extract
- pinch of ground cinnamon
- 2 grams salt
- 60 mL olive oil
- 240 mL nut milk [cashew milk recipe]
- oil for frying
In a small mixing bowl, whisk the eggs until fluffy.
In a medium mixing bowl, sift together dry ingredients. Add vanilla extract and eggs, mixing thoroughly, then add the nut milk and olive oil. Stir until just combined.
Heat a generous amount of oil in a large skillet. Scoop enough batter into the hot skillet to make a silver dollar size pancake (larger is not recommended). Leave space around the first pancake, then pour out enough additional pancakes to cover the skillet. Cook 2 minutes per side on medium heat, flipping in between.
Add additional oil and repeat until all batter is used. Makes about 12 pancakes.
