- 180 mL olive oil
- 255 grams coconut sugar
- 4 eggs
- 5 mL almond extract
- 120 mL nut milk [cashew milk recipe]
- 10 grams baking powder
- 192 grams almond flour
- 66 grams coconut flour
Preheat oven to 350 degrees F.
Grease a 9 x 3 inch springform pan. Line the bottom of the pan with a piece of parchment paper (cut to shape).
Cream the olive oil and eggs together until the mixture is smooth. Add in one egg at time, beating until thoroughly blended. Then, add the nut milk and almond extract.
In a separate bowl, sift together the dry ingredients. Sift the resulting mixture into the wet mixture, beating until smooth and creamy.
Pour the batter into the pan and smooth the top until level. Bake this for 75 minutes or until the torte pulls away from the side of the pan. Cool on a wire rack for ten minutes. Top with a simple sugar glaze while still warm if desired.
