Easy gluten free chocolate layer cake recipe

- 170 grams palm oil shortening
- 184 grams sorghum flour
- 53 grams sweet rice flour
- 1 1/2 tsp xanthan gum
- 86 grams unsweetened dairy-free cocoa powder
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 300 grams coconut sugar
- 3 large eggs plus 4 large egg yolks
- 2 teaspoons vanilla extract
- 1 cup dairy free buttermilk [buttermilk recipe]
Preheat oven to 350 degrees F. Grease two 8×2 inch round cake pans, then ‘flour’ with some extra cocoa powder, tapping out excess cocoa powder.
Sift together sorghum flour, sweet rice flour, xanthan gum, cocoa powder, baking powder, baking soda, and salt.
Beat palm oil shortening and sugar until light and fluffy. Add in eggs and yolks, one at a time. Beat in vanilla, then add the dairy free buttermilk. Add flour mixture, mixing until just combined.
Divide the batter between the two pans. Bake until cakes pull away from sides of pans (35 minutes). Let cool in pans 10 minutes, then run a knife around edges of pans and invert cakes onto a wire rack. Let cool completely.
Place one cake, bottom side up, on a cake stand. Tuck strips of parchment paper underneath the edges. Spread top with desired frosting, then top with remaining cake. Crumb coat the exterior, then frost and decorate as desired.
