Grain free chocolate torte recipe
- Contains EGGS
- 6 eggs, separated
- 5 mL vanilla extract
- 226 grams palm oil shortening
- 255 grams semisweet dairy free chocolate
- 191 grams coconut sugar
- 2 grams cream of tartar
Preheat oven to 350 degrees F.
Separate the eggs while still cold and bring to room temperature (30 minutes).
Grease a 9 x 3 inch springform pan. Line the bottom of the pan with a piece of parchment paper (cut to shape).
Place a stainless steel bowl over a pan of simmering water. Melt the chocolate and palm oil shortening together in this bowl. While doing this, place the egg yolks and 1/2 of the sugar in a mixing bowl and beat together until thick and pale yellow (about 5 minutes). Add the vanilla extract, then add the chocolate mixture when it is ready.
In a clean bowl, whisk the egg whites until foamy. Add in the cream of tartar and whisk until you have soft peaks. Then add in the remaining sugar and whisk until firm peaks form. Add in the egg yolk mixture until just mixed.
Pour the batter into the pan and smooth the top until level. Bake this for 60 minutes. Warning: the cake will collapse when removed from the oven. This is normal. Cool on a wire rack before covering with ganache [dairy free ganache recipe].
