Easy grain free chocolate chunk cookies recipe

Grain free chocolate chunk cookies recipe

- 57 grams palm oil shortening
- 52 grams coconut sugar
- 5 mL vanilla extract
- 1 egg
- 1 gram fine salt
- 2 grams baking soda
- 2 grams baking powder
- 144 grams almond flour
- 134 grams dairy-free chocolate chunks
Preheat oven to 375 degrees F.
Cream the palm oil shortening and the sugar together until light and fluffy. Add the vanilla extract and mix. Add egg. Add the salt, baking powder, and baking soda to the shortening mixture and combine thoroughly. Add the almond flour and combine, then mix in the chocolate chunks.
Take generous tablespoons of the crumbly dough and roll it into a small ball about an inch in diameter. Place onto a cookie sheet lined with parchment paper, pressing down lightly. Repeat until all dough is used.
Bake for 15 minutes or until the cookies rise and edges are a golden brown. Cool, then serve. Makes about one dozen cookies.
