All sugar is sugar, yet not all sugars are equal. The basic granulated cane sugar is in fact a grain, the product of the sugarcane grass. For those with certain food allergies, who might wish to reduce their intake of certain grains, or who are simply trying to limit histamine liberators such as sugar, it is beneficial to explore other options when using sugar in a recipe. We should of course try to do without added sugar whenever possible. This includes not consuming artificial sweeteners such as Aspartame, Splenda, and Equal.

It is best for ease of substitution to substitute granular sugars for granular sugars and liquid sugar for liquid sugars.
