Teff is a whole grain which is an excellent source of prebiotic fiber. If you need a bit of food to eat before taking a medication orally, this is just the thing. The biscuits are, as the name indicates, easy to digest with no fruit or nuts in them. The spice blend in this consists of spices considered anti-inflammatory, and is likewise easy on the stomach.

Tip: If you make the biscuits two-bite size, you can eat two or three as needed for the amount of medication you are taking.



Mix together the agave syrup, coconut sugar, fine salt, eggs, and palm oil shortening in a large mixing bowl.

Fold in the remaining dry ingredients until just combined.

Line a large baking sheet with parchment paper.

Take small handfuls to make drop cookies (or use a small ice cream scoop or melon baller if you have one). Drop each cookie on the sheet.

Refrigerate the baking sheet for 30 minutes before baking so the biscuits have time to firm up a bit.

Preheat oven to 350 degrees. When at temperature, bake at 350 degrees for about 18 minutes or until the edges are just browned. Cool completely.

Servings: about 18 two-bite biscuits.
